Method:

1. Preheat the oven to 180°C and line a tray.

2. Mix flour, baking powder, cinnamon, and sugar.

3. Add eggs and mix until crumbly.

4. Fold in mincemeat, nuts, cranberries, and rum.

5. Shape into two logs. (They don't have to be perfect. Nothing here does.)

6. Bake for 30 minutes, turn the oven off, and leave to cool until barely warm.

7. Slice into 1cm pieces.

8. Bake again at 150°C for 20 minutes.

9. Cool completely and store in an airtight container.

They keep for up to 4 weeks or can be frozen for 2 to 3 months. Which means you can make them early and feel extremely organised. Look at you go.
